Ingredients
- 1 1/4 cups semolina flour
- 6 tbsps water
- 1 teaspoon instant yeast for savory preparations
- Half teaspoon salt
- 2 oz speck
- 3 1/2 oz robiola
Steps
Pour the flour into a bowl, add the yeast, the salt, and the water a little at a time, and knead as you gradually add the rest of the water.
Move to the work surface, sprinkle with flour, and roll out with a rolling pin, cut out 6 discs of 4 inches.
Stuff with robiola and speck, then fold in half and seal the edges.
Place the panzerotti on a baking sheet or in a pan or air fryer, oil them, and cook turning them for about 12-15 minutes at 356°F
