How much I love quick homemade puff pastry! It’s a very old recipe, about 12 years ago, that I like to remake every now and then especially when I want to add more flavor to my sweet and savory dishes.
It really takes 5 minutes or a little more to prepare, and it’s a brilliant idea if you like to make puff pastry at home but don’t have much time for the traditional method. Classic puff pastry requires resting times and a slightly different process, but this quick puff pastry is very simple and accessible to everyone.

Ingredients
- 1 pinch salt
- 4.4 oz butter
- 1 cup ricotta
- 2 cups all-purpose flour
Steps
Put the ricotta and cold butter in a bowl and work with a fork.
Add the salt and flour and continue to work with the fork until you get a crumbly mixture.
Place the crumbs on plastic wrap and form into a sort of block, wrap it and put in the fridge for at least 30 minutes.
After the time has elapsed, take the block and place it on a floured surface. Do not remove it from the plastic wrap if there are many crumbs; in that case, compact it a little with your hands.
Take a short side and bring it towards the center, then cover with the other short side, using the plastic wrap if needed.
Dust with flour and flatten with the rolling pin or your hands and repeat the folding process, bringing the short side over the dough and covering with the other short side.
During these steps, the dough becomes smoother.
Repeat everything again, roll out with the rolling pin and make the third round of folds, without needing to refrigerate between each fold.
When you have finished the third round, wrap the block in plastic wrap and refrigerate for 30 minutes before using it.
You can store it in the freezer or fridge for about 3-5 days.
