Quick Raw Pumpkin Fritters

Ingredients

  • 3.5 oz pumpkin
  • 3.5 oz all-purpose flour
  • 1 tsp instant yeast for savory preparations
  • Half tsp salt
  • 2 tbsps Parmigiano Reggiano PDO
  • 1/4 cup sparkling water

Preparation

  • In a bowl, mix the flour and salt, add the yeast and cheese, mix again then add the water and let it rest for 15 minutes.

  • Clean the pumpkin, remove the seeds and fibers, then grate it with a large-holed grater and place the flesh in a bowl.

  • The mixture should remain soft and creamy, if needed, you can add one or two tablespoons of water.

  • Then heat the oil in a pan and drop spoonfuls of the mixture into it.

  • My fritters are about 2 tablespoons each, fry them, turning them over, and drain on kitchen paper.
