Delicious quick skillet pizzettes, they are made in a few minutes and are perfect as appetizers, party snacks, and buffets. They can be prepared in advance and filled later with whatever you like.
The recipe for making quick skillet pizzettes with sausage and provolone is very simple, I had some sausages in the fridge to use, of course if you don’t like them, you can fill with tomato and mozzarella or with ham and provolone or seasonal vegetables.

Ingredients
- 1 1/4 cups all-purpose flour
- 1/4 cup water
- 1 tsp instant yeast for savory recipes
- 2 tbsps extra virgin olive oil
- 3 1/2 oz sausages (cervellatine)
- 2 3/4 oz provolone cheese
Steps
Pour the flour into a bowl, add the yeast, salt, water, and oil, and mix well.
Roll out the dough on the work surface and cut it with a 2.75-inch cutter or a glass.
Cook the sausages in a skillet with a lid or in a fryer.
Heat a pan and place the pizzettes, cook on medium-low heat for 3-4 minutes, then turn them over and continue cooking.
Top with crumbled sausages and provolone pieces, and cook with a closed lid for a few minutes.
Add a sprinkle of chives and serve.
