Ingredients
- 1.1 lbs potatoes
- 14.1 oz smoked provolone (or aged)
- 7.1 oz thinly sliced speck
Steps
Wash and peel the potatoes then cut them into thin slices with a knife or a mandoline.
Grate the smoked or aged provolone, fior di latte, or a mozzarella that’s a few days old and make a layer on a baking sheet lined with parchment paper.
Place a layer of potatoes on top of the cheese forming a rectangle, fill with slices of speck and provolone, then more potatoes, speck, and provolone.
