Ingredients

  • 18 oz broccoli rabe
  • 2 sausages
  • 2 oz provola cheese
  • 0.42 cup water
  • 7 oz flour (I used type 2 flour)
  • 1 pinch salt

Steps

  • Wash the broccoli rabe well and place them in a pan with oil, add the sausages, 1 or 2 cut into pieces, cover with the lid and let them cook, adding a bit of water if needed.

  • Pour the flour into a bowl, add the water and mix, type 2 flour requires a bit more water so adjust, add the salt and mix.

  • Pour the dough onto a floured board and work it a bit until you get a smooth dough, then roll it out and cut out 6 disks of about 4 inches.

  • Stuff half of the disks with broccoli rabe, sausage, and provola, they should be cold or warm, cover with the other disks.

  • Seal the edges, place the rolls on a tray lined with parchment paper, brush with oil and bake at 350°F for about 12-15 minutes.
