I made them by chance with what I had in the fridge after the holidays 😅 a bit of leftover ricotta and a roll of puff pastry to use up… and out came one of those recipes that always save you! These ricotta bites are lightning-fast, super versatile and above all they disappear in a flash.
The genius of these ricotta bites is that you practically don’t have to do anything: few ingredients, zero stress and in less time than it takes you to decide what to cook you already have a perfect appetizer. Ideal for impromptu aperitifs, buffets, birthday parties or even a quick dinner when you have no ideas.

Ingredients
- 1 roll puff pastry sheet
- 1 1/4 cup ricotta (well drained)
- 5 oz provola (cubed)
- 1 egg
- 1/2 cup grated Parmesan
Steps
In a bowl, mix the ricotta with the egg, Parmesan, salt and pepper. Add the provola cubes.
Roll out the puff pastry and leave it on its baking paper. Fill one half of the rectangle with the filling, close the pastry by bringing the other half over the filling, press the edges with a fork to prevent it from opening during baking.
Score the surface in a grid pattern, bake at 356°F for 25–30 minutes until golden and puffed.
