Risotto with Escarole and Sausage

A very simple recipe that is good for both lunch and dinner, the risotto with escarole and sausage is mouth-watering, I might be biased but vegetables are delicious and perfect with sausage in this dish.

Ingredients

  • 1 Sausage
  • Half Escarole (endive)
  • 1 tbsp Canned cherry tomatoes
  • Half clove Garlic
  • 80 g Brown rice (or risotto rice)
  • as needed Butter
  • 1 1/4 White wine

Preparation

  • Wash the escarole well and cut it into strips.

  • Skin and crumble a sausage then place it in the pan with some white wine.

  • Cook over high heat to evaporate the wine.

  • Place the escarole in a large pan with oil, chopped garlic, cherry tomatoes, and some vegetable broth.

  • Cook until the water is almost completely evaporated

  • At this point, add the rice and vegetable broth, cook stirring continuously, adding broth as needed.

  • If you prefer, towards the end, add some butter for creaminess, especially for risotto rice.
