Ingredients
- 1 Sausage
- Half Escarole (endive)
- 1 tbsp Canned cherry tomatoes
- Half clove Garlic
- 80 g Brown rice (or risotto rice)
- as needed Butter
- 1 1/4 White wine
Preparation
Wash the escarole well and cut it into strips.
Skin and crumble a sausage then place it in the pan with some white wine.
Cook over high heat to evaporate the wine.
Place the escarole in a large pan with oil, chopped garlic, cherry tomatoes, and some vegetable broth.
Cook until the water is almost completely evaporated
At this point, add the rice and vegetable broth, cook stirring continuously, adding broth as needed.
If you prefer, towards the end, add some butter for creaminess, especially for risotto rice.
