Ingredients
- 2.2 lbs flour (the one you usually use)
- 20 cups water
- 0.9 oz fresh yeast (or 8 g of the dry one)
- 0.14 cups sugar
- 0.9 oz salt
- 2.5 oz lard (or oil)
- 20 sausages (large)
- peanut oil
Steps
Dissolve the yeast with sugar in a little warm water.
In a large bowl or stand mixer, put the flour and add the water with yeast a little at a time.
When the dough comes together, add the lard in pieces and finally the salt.
Knead until smooth and elastic (10 min in a mixer or 15 by hand).
Cover and let rise for 2 hours, or until doubled.Divide the dough into 20 pieces, roll each piece into a long stick and wrap it around the sausage, covering it almost completely.
Place the rollò on lightly greased parchment paper, cover with a towel and let rise another 45–60 min.
Heat the oil and fry a few at a time until they are puffed and golden (about 5–6 min).
Drain on absorbent paper.Let cool slightly and cut each rollò into 3 equal pieces.
If you prefer to bake them, 340°F for about 15–20 min.
