When I lived in Rome, there were Mrs. Pina with Giuliano upstairs, next to Maria, Giuliano’s sister, with Aldo. Aldo was so sweet, he gave me a ceramic elephant, a base for a small table, he knew I liked them and ancient Roman reproductions, he’s no longer among us now, but I still keep those gifts of his, after so many years.
Pina was, and is, an excellent cook, she made tagliatelle with sauce, all homemade, really spectacular. A very beautiful period in which I appreciated the city, the people, the cuisine.
Steps
Pour the flour into a bowl, add the baking powder, a pinch of salt, the egg, the oil, and start mixing. Add a bit of wine, just enough for kneading so the dough isn’t sticky.
Move to the kneading board and work the dough until smooth and homogeneous, dust the surface and roll out the dough.
Cut into diamond shapes with a fluted wheel and fry in hot oil, turning them.
Drain on kitchen paper and sprinkle with powdered sugar.
