Roman whipped pizza Easter sweet

Ingredients

  • 4 eggs
  • 1 cup all-purpose flour
  • 0.6 cup sugar
  • 2 tsp butter
  • 1 lemon zest
  • 1 pod vanilla

Steps

  • Beat the eggs well with sugar, grated lemon peel, and seeds from the vanilla pod. If not available, you can use vanilla powder or a few drops of vanilla essence.

  • The eggs should be beaten for 1 hour. I worked them with a stand mixer for 20 minutes; with a hand mixer, it takes an hour and might overheat.

  • Add the flour by hand by gently folding, or if you have a stand mixer, set it to the lowest speed.

  • Add the flour little by little, work a bit, then stop and continue mixing by hand to combine well.

  • The dough needs to be beaten by hand, using the right hand, hence the name beaten pizza, without a mixer or spoon, just with the hand.

  • Butter and flour a tall 8-inch mold and pour the mixture; I used a casatiello mold with a base of about 6 inches, and the cake is about 3 inches high

  • Bake in a preheated oven at 340°F for about 30 minutes, do a toothpick test. I baked with the static oven.

  • At the end, turn off the oven, leave the door open for 5 minutes, then remove from the oven.
