The rustic broccoli and cauliflower pie recipe is very simple, you prepare the leavened dough and fill it with vegetables, cheese, and sausages that go perfectly with the broccoli.

Ingredients
- 4 cups all-purpose flour
- 1 cup water
- 0.4 oz fresh brewer's yeast
- 1 1/2 teaspoon salt
- 2 tablespoons extra virgin olive oil
- 5.3 oz cauliflower
- 5.3 oz broccoli
- 4 sausages
- 3.5 oz fiordilatte cheese
- 2 tablespoons Parmigiano Reggiano PDO
Preparation
Dissolve the yeast in the water and add some flour, mix, add the salt and the rest of the flour, knead well.
If needed, add a little flour, make a ball and let it rise in a bowl covered with plastic wrap for about 3 to 6 hours.
Meanwhile, clean the vegetables well and cut them into pieces, then cook them in a pan with a drizzle of oil, a clove of garlic if you prefer, with a closed lid.
After rising, take the dough and divide it into two parts, roll them out, oil a pan, and place one sheet.
Fill with the vegetables, diced cheese, and chopped sausages.
Close with the other sheet sealing the edges, if you like make a design with leftover dough.
Cook one side well for about 7 minutes, then turn and cook the other side.
