Ingredients
- 1.75 cups all-purpose flour
- 3.5 tbsp extra virgin olive oil
- 2 tbsp vegetable oil
- 3.5 tbsp water
- 1.1 lbs spinach
- 9 oz ricotta
- 1 egg
- 5 oz provola cheese
- 1 tsp salt
Steps
Wash the spinach.
Oil a pan, add a garlic clove, let it brown then remove it.
Add the spinach and sauté them for a few minutes.
Prepare the base dough.
Pour the flour into a bowl or food processor, add the oils, salt, and water gradually.
Work everything, the dough should have a firm consistency, not sticky, so add water as needed.
Divide the dough into two parts, one larger and one a bit smaller, and roll them out. Place the larger one in a greased pan.
Mix the ricotta with salt and an egg or water if preferred, I didn’t use it.
Pour the spinach over the pastry, add the ricotta, some provola pieces if you like, and cover with the other pastry.
Cook for about 15 minutes per side, flipping the rustic pie with the help of a plate.
Alternatively, you can bake at 355°F for about 25 minutes, keep it under control.
