The rustic vegetable pie is delicious, soft, a perfect main dish for dinner, great for a picnic, the dough is prepared without leavening and filled with vegetables.
This rustic vegetable pie doesn’t require scales, use a glass as a measuring unit, it can be cooked in a pan, as I did, or in the oven or air fryer, it’s very good and can be filled as you like, the dough is very soft and tasty.
Of course, you can add cold cuts, cheeses or vary the filling with whatever you prefer.

Ingredients
- 2 glasses all-purpose flour
- 1 egg
- Half glass water
- Half packet instant yeast for savory preparations
- 17.6 oz mixed frozen vegetables (fresh)
- Half teaspoon salt
- 3.5 oz provolone cheese
Steps
For the recipe, I used the classic small Nutella glasses.
Pour two glasses of flour into a bowl, roughly 9.2 oz, add the yeast and salt, then mix in the egg and stir.
Add the water, mix, and start kneading, add a bit of flour if needed.
Let the dough rest and wash and cut the vegetables, I used fresh peppers, zucchini, and eggplants.
Cook in a pan with a drizzle of oil until softened or in an air fryer at 375°F for 15 minutes.
Divide the dough in half and roll out one half in an oiled pan of 22 cm (about 8.7 inches) or 24 cm (about 9.5 inches).
Fill with the vegetables, add the provolone cheese, and close it with the other half of the dough.
Cook in a pan for about 10 minutes turning it over or in the oven at 350°F for 20-25 minutes or in the air fryer at 350°F for 15 minutes turning it over.
