RUSTIC ROLL with bacon and provolone, easy and super fast, delicious recipe for dinner or appetizer to make in 10 minutes, without rising, crispy outside and soft inside.
This rustic bacon and provolone roll was born as it often happens: my son’s friends over for dinner, half-full fridge and no desire to knead for hours. A bit of flour, water, and oil for the base, bacon, and provolone as filling, and a rustic recipe that disappears as soon as you bring it to the table emerged.
The great thing is that this no-rise savory roll is practical, quick, and always a solution. It is perfect as an informal dinner, as a warm appetizer or for a buffet, and it slices without crumbling. Crispy outside, melty inside, just as it should be.
The quick bread-type base rolls out in no time, requires no resting time, and holds the filling perfectly. Bacon and provolone are a classic that always works, but this rustic roll is also a real fridge-cleaner recipe: you can change the meats and cheeses based on what you have.

Useful Tips
Roll out the dough thin but not too thin, so the roll stays soft and doesn’t break.
Use well-drained provolone to avoid releasing water during cooking.
For a lighter version, you can cook it in an air fryer, it’s still golden and crispy.
Great the next day too: just warm it up for a few minutes and it’s perfect again.
