SALAD IN MELON with PROSCIUTTO and MOZZARELLA, easy and quick recipe, side dish, appetizer or simple and light summer main course with fruit.
Delicious summer salads, I love them in every way, this salad in melon is really tasty with the addition of prosciutto and mozzarella, a sort of enriched Caprese that is prepared in a few minutes.
It’s known that with the heat the desire for fresh and pleasant foods increases, the salad in melon is a classic, it’s very good and can be enriched in many ways or with ingredients you have in the fridge.
Obviously, you can modify it to your liking, if you don’t like prosciutto you can always use raw ham or bresaola, add avocado, corn, arugula, or zucchini.
I brought this salad to the table as an appetizer and I must say it was very much appreciated, I made one for dinner which is definitely perfect, with the heat there’s little desire and this salad is quite fresh and inviting.

Ingredients
- 1 cantaloupe melon
- 20 cherry tomatoes
- 2.1 oz prosciutto
- 3 mozzarella (bocconcini or cherry)

Obviously the quantities vary depending on the size of the melon.
Preparation
Cut the melon in half across the width, look for melons that are not too large.
Remove the seeds and scoop out the flesh leaving a layer, do not reach the rind.
Cut the flesh into pieces, the cherry tomatoes into wedges, and the mozzarella bocconcini in half or use the cherries.
Put everything in a bowl, add the prosciutto, season with oregano, salt, oil, and basil leaves, mix well.
Arrange everything in the two melon halves and serve.
