I am in a hurry as usual but I want to show you what I prepared for tonight, these boats with puff pastry are super quick, I stuffed them with what I had at home.
I never run out of ricotta and avocado and obviously today I have salmon so it really took me just a moment, I love them, they are beautiful and also tasty.
If you don’t have ricotta use stracchino or robiola or Philadelphia and for the avocado it is obviously optional, if you don’t like it or don’t have it, leave it out.
Pineapple would also be perfect, which you might have at home, or an apple puree with lemon juice otherwise it will darken.

Ingredients
- 1 puff pastry (rectangular)
- 1 avocado
- 5 slices smoked salmon
- 3.5 oz ricotta
Preparation
Cut the puff pastry into 10 equal rectangles.
Join the corners of each rectangle.
Make a complete turn of the tip to obtain a sort of bow tie.
Pierce the entire inside with a fork and place the boats on parchment paper, separating them with the paper itself.
Bake in a hot oven at 392°F (200°C) for 10 minutes, remove from oven and let cool.
Mix the ricotta with salt and pepper to taste and set aside.
Cut the avocado into pieces and place it in a mixer, add salt and a splash of lemon juice, and blend everything.
If needed, add some ricotta, a couple of teaspoons, to get a creamier mixture.
Fill the boats; if they have puffed up in the center, press down a bit with your finger. If they are cold, the pastry won’t break, but proceed cautiously.
Add a bit of ricotta, place half a slice of salmon and avocado cream with the help of a pastry bag.
If you don’t have a pastry bag, use a teaspoon and decorate with pink peppercorns or mint leaves.
