I don’t prepare canapés very often, only on rare occasions of parties and obviously, you can modify it maybe with capricciosa salad and salmon or tuna or cooked ham if you don’t like salmon.
You can add green olives cut into pieces, red peppercorns or replace the Russian salad with a mascarpone, ricotta, and mayonnaise mousse.

Ingredients
- 1 slice sandwich bread
- 150 g Russian salad
- 35 g smoked salmon
Steps
For the canapés, you can use either store-bought or homemade Russian salad HERE
Cut the sandwich bread in a way to create triangles, the typical shape of canapés, or you can roll the bread like cannoli HERE
Stuff with Russian salad and smoked salmon then decorate with fennel fronds or chopped parsley or chives.
You can prepare them in advance and keep them in the fridge until serving.
