Ingredients

  • 1 slice sandwich bread
  • 2 oz smoked salmon
  • 4 tbsp mayonnaise
  • 1 1/4 cups escarole (endive) (or arugula)
  • 1/4 cup ricotta

Preparation

Instead of ricotta you can use Philadelphia, robiola or stracchino.

  • Work the ricotta with the mayonnaise to obtain a sort of cream.

  • Spread the cream on the bread then add the salmon.

  • Wash the greens well then stuff the bread and roll it up.

  • Wrap it in plastic wrap and put it in the fridge, then slice it into rolls before serving.
