Ingredients
- 1 slice sandwich bread
- 2 oz smoked salmon
- 4 tbsp mayonnaise
- 1 1/4 cups escarole (endive) (or arugula)
- 1/4 cup ricotta
Preparation
Instead of ricotta you can use Philadelphia, robiola or stracchino.
Work the ricotta with the mayonnaise to obtain a sort of cream.
Spread the cream on the bread then add the salmon.
Wash the greens well then stuff the bread and roll it up.
Wrap it in plastic wrap and put it in the fridge, then slice it into rolls before serving.
