Obviously, the star vol-au-vents can be filled as you prefer, excellent with ham, for example, or mortadella, speck, and other cheeses like ricotta or stracchino.

Ingredients
- 1 puff pastry
- 2 slices smoked salmon
- 0.7 oz robiola cheese
Preparation
Unroll the puff pastry on the work surface and cut it with a 3-inch star-shaped cutter
You should be able to make 10 for sure, probably 12, which means you’ll have 5-6 vol-au-vents.
Each vol-au-vent consists of 3 stars: the first, the base, is whole, the other two are open in the center.
Place the whole stars on a baking sheet lined with paper and brush them with water or beaten egg white, I used water.
Remember they must be in multiples of 3 and make a hole in the center of the other stars with a plastic cap.
Then place two holed stars on top of each whole star, then bake in the preheated oven at 390°F fan-assisted and cook for about 15 minutes.
Remove from oven, mix the robiola with salt and pepper to taste, fill the stars, cut the salmon into pieces or strips and arrange them in the stars.
Garnish with mint leaves and pink peppercorns.
