Ingredients

  • 1 slice sandwich bread
  • 1.75 oz smoked salmon
  • 1/4 cup mayonnaise
  • 1 oz escarole (endive) (or arugula)
  • 1.75 oz ricotta

Preparation

Instead of ricotta, you can use Philadelphia, robiola, or stracchino.

  • Work the ricotta with mayonnaise to obtain a sort of cream.

  • Spread the bread with the cream then add the salmon.

  • Wash the vegetables well, then fill the bread and roll it up.

  • Wrap it in plastic wrap and place it in the fridge, then cut it into swirls before serving.
