Santa Lucia Shortbread Cookies

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1 egg yolk
  • 4 tbsps butter
  • as needed lemon zest
  • 1/4 cup sugar

Steps

  • Chop the lemon peel with the sugar in a mixer.

  • Then add the flour, baking powder, sugar, and butter to the food processor, and work well.

  • Then remove the dough and let it rest, preferably overnight.

  • If you don’t have time, put it in the fridge for half an hour.

  • Preheat the oven to 350 degrees Fahrenheit.

  • Remove the dough and roll it out with a rolling pin on a floured surface.

  • Cut out with star, heart, or horse-shaped cookie cutters and place them on a baking tray lined with parchment paper.

  • Bake for about 15 minutes.
