Ingredients
- 1 3/4 cups re-milled durum wheat semolina
- 3/4 cup all-purpose flour
- 1 1/2 teaspoons fresh yeast
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon salt
- 2/3 cup water
- 7 oz tomatoes
- 1 clove garlic
Preparation
Dissolve the yeast in water, then add some flour, mix, and gradually add the remaining flour.
Knead well, work the mixture thoroughly, make a ball and let it rise in a bowl covered with plastic wrap until doubled, about 3-4 hours.
After the time has passed, roll out the dough in a 8.5-inch pan, the pan should be much smaller.
Cut the tomatoes into pieces, season with oil, salt, basil if in season, and garlic.
Fill the base then bring the dough over the filling but do not close it entirely.
Brush with oil and bake in a preheated oven at 450°F for about 20 minutes.
