Ingredients
- 2 Artichokes
- Fennel
- 1 Shallot
- 1 tablespoon Capers
- Lemon juice
- to taste Sun-dried tomatoes
Preparation
Clean the fennel, remove the tougher outer leaves and the inner fibers.
Wash them and slice them into pieces about 0.4 inches thick and sprinkle with lemon.
Slice the shallot and place it in a pan with oil, add the artichokes, a splash of lemon and let cook with the lid on.
Wash the fennel thoroughly and slice or chop it as you prefer, add them to the artichokes.
Chop one or two sun-dried tomatoes and add them to the pan, also add the capers rinsed under running water.
Cook for about 15-20 minutes, at the end add fennel fronds or parsley and serve immediately.
