Ingredients

  • 1 1/4 cups Flour (whatever you have at home)
  • Half packet Instant yeast for savory preparations
  • 2 Eggs
  • 1 teaspoon Salt
  • 1/4 cup Extra virgin olive oil
  • 2/3 cup Water (or milk)
  • 2 Sausages
  • 1 1/2 cups Broccoli rabe (weight after cooking)
  • 3 1/2 oz Mixed cold cuts
  • 2 3/4 oz Scamorza (provola cheese)

Preparation

  • First, thoroughly clean the broccoli rabe; you can use broccoli or frozen ones if you find them.

  • Remove the woody stems and use the green leaves, wash them well to remove any soil residues.

  • Put them in a pan with oil and cook over medium heat; as soon as they begin to wilt, cover with a lid and lower the heat.

  • Obviously, keep the burner under control to avoid burning them; if necessary, add more oil.

  • Avoid adding water if you want them tastier.

  • Remove the casing from the sausages and cook them in a pan, breaking them up with a fork, without oil or water.

  • When the filling is ready, prepare the base.

  • Butter and flour a 20 cm (8-inch) ring mold.

  • Crack the eggs with the water and oil in a bowl and mix with a hand whisk.

  • Add the sifted flour with the yeast, and keep mixing to avoid lumps.

  • Add the sausage, diced cold cuts (you can find them ready at the store), and provola cheese.

  • Mix and add the drained broccoli rabe from the oil.

  • Pour everything into the mold, level it, and bake in a preheated oven at 180°C (356°F) fan-forced.

  • Bake for 25-30 minutes; always do the skewer test before removing from the oven.
