SAVORY CAPRESE PANCAKES with tomato and mozzarella, soft and quick, perfect for dinner or appetizer, ready in 10 minutes, super tasty, summery, fresh, and delicious.

I was looking for something different for dinner, maybe something tasty but quick to make with what I already had at home. And so these savory caprese pancakes were born, a real surprise! Soft, no rising, ready in the pan, made with very simple ingredients: mozzarella, tomato, and basil.

Perfect as an alternative to the usual main dish or for a quick meatless dinner, but they are also great for a summer appetizer, a savory buffet, or to take on a picnic. The texture is soft and flavorful, and with a drizzle of extra virgin olive oil and some fresh basil leaves, they become irresistible!

You can enrich them with a little grated Parmesan, or fill them with ham, ricotta, or tuna if you want to make them richer. They are also a good idea for fridge-clearing recipes, when you have leftover mozzarella and some cherry tomatoes to use up.

Try them both hot and warm: they remain soft and flavorful, one leads to another!

SAVORY PANCAKES CAPRESE

Ingredients

  • 1 cup all-purpose flour
  • 1 egg
  • 3.4 oz water (or milk)
  • 1 teaspoon instant yeast for savory preparations
  • 2 teaspoons extra virgin olive oil
  • 3 tomatoes
  • 2.8 oz mozzarella (or fiordilatte)
  • basil
  • dried oregano

Steps

  • Pour the flour into a bowl with the yeast and salt, mix, add the oil, the egg, mix and finally the water, work with a spoon then with a whisk until the batter is creamy.

  • Cover the batter with plastic wrap and let it rest for 30 minutes.

  • Heat a pan with a drizzle of oil, then pour a small ladle of batter and cook until bubbles appear on top, then flip and cook the other side.

  • Cut the tomatoes into pieces and place them in a bowl, add oil, salt, oregano, and mix, then some basil leaves.

  • Fill with mozzarella slices and tomatoes and pair the pancakes.

  • Serve with a sprinkle of oregano and if you prefer, with a drizzle of oil.
