Of course, you can use pecorino or grana if you prefer, or add oregano or rosemary. They are delicious to enjoy with a good glass of beer or wine.

Savory Knotted Parmesan Chiacchiere

Ingredients

  • 1 3/4 cups all-purpose flour
  • 2 eggs
  • 1 tbsp parmesan
  • 1 tbsp honey
  • 1 pinch salt
  • 5 1/2 tbsp butter
  • 1 1/2 tbsp dry white wine

Steps

  • Pour the flour into a bowl or mixer.

  • Add the eggs, honey, salt, parmesan, white wine, and butter and mix quickly.

  • Take the dough and roll it out well with a rolling pin on a lightly floured surface, and cut it into 3/4 inch wide strips about 4-6 inches long. Knot them and fry in hot oil. You can use a pasta machine if you want them thinner.

  • Cook for a few minutes, until they start to brown and puff up. Drain on kitchen paper and sprinkle with salt before serving.
