- 1 3/4 cups flour (the one you usually use)
- 2 tablespoons white wine
- 2 eggs (small)
- 2 tablespoons extra virgin olive oil
- 20 black olives
- 1 teaspoon baking soda (or instant yeast)
- dried oregano
- 1 teaspoon salt
Steps
Pour the flour into a bowl, add the baking soda, oil, dry white wine, salt, and eggs, mix and you will get a crumbly mixture.
Pit the olives and add them to the dough; if you use pitted olives, cut them into pieces, those with the pit are soft and break on their own.
Knead and move onto the work surface; at this point, you might need a bit of flour, sprinkle the surface with a tablespoon and finish working the dough, if needed, add another.
The dough is slightly sticky because of the olives, try not to add too much flour, oil your hands if necessary.
Make small loaves 1/8 to 1/4 inch wide, cut into pieces, roll on the palm of your hand, and arrange them on the surface.
Heat the oil in a tall pan and fry, or put everything in the air fryer basket, oil well, and cook at 375°F for 5 minutes, turn them over and put back in for another 5 minutes.
