Ingredients

  • 2 cups all-purpose flour
  • 6 tablespoons extra virgin olive oil
  • 0.5 cup water (approximately)
  • 7 oz potatoes
  • 5 oz provola cheese
  • 2 oz cooked ham
  • 1 egg

Steps

  • Prepare the dough, pour the flour into a bowl with a pinch of salt, add the oil and mix, then add the water a little at a time and work until the dough becomes smooth. If necessary, add a little more water or flour if it’s too soft.

  • The dough is somewhat flaky, but once rolled out it is perfect.

  • Cut it and place it in the molds, mine are for tarts of 2.75 inches.

  • Grate the potatoes with a coarse grater, place them in a bowl, add the egg, salt and pepper to taste, provola or another cheese of your choice, and the ham cut into pieces.

  • Mix well and fill the tarts.

  • Bake in a preheated oven at 356°F for about 15 minutes, being careful not to over-burn the top. The dough may seem raw underneath, but it’s just the presence of oil in the dough.
