I prepare them when I want an elegant seafood appetizer but simple, perfect for Christmas Eve, New Year’s Eve, or a Christmas buffet.
I use the ready-made seafood salad, add shrimp cooked by me and some olives to give character.
Result? Crispy baskets outside and soft inside, one leads to another.

Piadina baskets are perfect as a single-portion appetizer: your hands stay clean, they look great on the plate and instantly create a festive atmosphere.
They can be prepared in advance and filled at the last moment to remain lovely and fragrant.

Ingredients

  • 2 piadine
  • 10.5 oz cuttlefish
  • 20 mussels
  • 4 jumbo shrimp (or regular shrimp)
  • 1 lime
  • pink peppercorns
  • arugula
  • 4 pitted olives

Steps

For the recipe, I used a ready-made seafood salad consisting of cuttlefish and mussels to which I added the shrimp.

  • If you prepare the salad at home, clean the cuttlefish and cut them into pieces, cook in a pan with a drizzle of oil with the lid on for about 20 minutes, add the cleaned shrimp and complete the cooking for another 5 minutes.

  • Cut the piadine with a 4-inch cutter to make 4 discs, place them inside a tart or muffin mold and bake in the oven at 356°F for about 8 minutes, they should turn golden.

  • In a bowl, combine cuttlefish, mussels, and shrimp, dress with oil and lime juice.

  • Place some arugula at the bottom of the baskets and add the seafood salad, one shrimp, a drizzle of oil, a lime slice, sliced olives, and a sprinkle of pink peppercorns.
