The recipe for the shortcrust roll with apples and amaretti is very simple, you will need to prepare the classic shortcrust pastry with flour, sugar, butter, and eggs, then stuff it with amaretti, chopped apples and add a tablespoon of cooked wine which can be replaced with rum.
I love it, it’s very good, for those who love apple desserts it’s really delicious, with the cooked wine the filling is very fragrant but it can always be replaced and if you prefer you can add jam, but I wanted something different and I didn’t use it.
Shortcrust pastry is perfect for making fairly quick desserts for breakfast, if you don’t want the classic cookie just make a roll filled with simple jam or Nutella and you’re done.

Ingredients
- 1 2/3 cups all-purpose flour
- 1 egg
- 5 1/2 tbsp butter
- 1/3 cup sugar
- 1/2 tsp baking powder
- 1 apple
- 10 amaretti
- 2 tbsp cooked wine (or rum)
Steps
Pour the flour with the baking powder onto the work surface and make a hole in the center, add the sugar, the egg, the soft butter in pieces, and a pinch of salt, and knead well.
Make a ball, wrap it in plastic wrap and put it in the fridge for at least 20 minutes.
Peel and chop the apple into small pieces, put it in a bowl, add the crumbled amaretti, sugar, and cooked wine which you can replace with rum.
Mix the ingredients, mash a little with a fork, and set aside.
Remove the dough from the fridge, roll it out on a floured work surface, create a rectangle, fill with the filling, and roll up.
Seal the two ends to prevent leaks and place the roll on the oven tray lined with parchment paper, bake in a preheated oven at 350°F for about 20 minutes.
