Shrimp and potato salad

Ingredients

  • 14 oz potatoes
  • 18 oz shrimp
  • 1 cup cherry tomatoes
  • 1 cup arugula
  • 1.75 oz black olives

Steps

  • Wash the potatoes thoroughly and peel them, then cut them into chunks not too small and boil them, place them in a bowl and let them cool.

  • Frozen shrimp are perfect if you can’t find fresh ones, if fresh, shell them and remove the intestine with a toothpick.

  • Cook them in a pan with a drizzle of oil for a few minutes, as soon as they change color they are cooked.

  • Cut the cherry tomatoes into 4 wedges and add them to the potatoes, add the arugula and curly lettuce if you like, the olives then season with oil and salt and mix.
