  • 4.2 oz crackers
  • 2.1 oz butter
  • 8.8 oz shrimps
  • 3 tbsp mayonnaise
  • 1 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • drops brandy
  • pepper
  • salt
  • 1.8 oz arugula
  • 0.7 oz pine nuts
  • 1.4 oz grated Parmesan cheese
  • 2 oz extra virgin olive oil
  • salt
  • shrimps
  • pink peppercorns
  • leaves arugula

Steps

  • Finely chop the crackers, mix with melted butter until you get a sandy mixture and place it in 4 glasses, compacting slightly. Refrigerate for 20-30 min.

  • Cut the shrimps into pieces (leaving 4 whole for decoration), mix mayonnaise, ketchup, Worcestershire, and (if you like) a splash of brandy.

  • Combine the shrimps and mix, season with salt and pepper.

  • Blend arugula, pine nuts, Parmesan, and oil until you get a smooth pesto (not too thick). Adjust salt.

  • On the (already prepared) bottom of the glasses, insert a layer of shrimp cocktail, add a heaping tablespoon of arugula pesto.

  • Decorate with a whole shrimp, fresh arugula, pink pepper, and a slice of lime.
