Ingredients
- 1 slice pandoro
- 500 g mascarpone
- 2 egg yolks
- 60 g sugar
- 2 egg whites (optional)
Steps
For the mascarpone cream, you can use whole eggs or just the yolks.
Pasteurize the yolks by beating them with a hand whisk in a bain-marie with the sugar for 3 minutes; they should not cook, or they will curdle.
A fluffier cream is obtained by whipping the egg whites to stiff peaks, but you can also omit them; if not, whip them and then fold them into the rest of the cream.
Work the mascarpone with the yolks, then add the egg whites.
Crumble the pandoro and place about a tablespoon at the bottom of the glasses, add the cream, and dust with cocoa.
Of course, you can make more layers of pandoro if you prefer, then refrigerate until serving or for at least 30 minutes.
