Ingredients
- 1 3/4 cups all-purpose flour
- 1 egg
- 1/4 cup sugar
- 5 tbsps butter
- jam
- 2 egg whites
- 3 tbsps sugar
- 3 tbsps powdered sugar
- 1 egg yolk
- 2/3 cup ricotta
- 2 tbsps sugar
Steps
Prepare the shortcrust pastry, pour the flour into a bowl, add the sugar, egg, and butter with a pinch of salt, knead well.
Place the pastry in a 8-inch mold and put it in the freezer.
Mix the ricotta with the egg yolk and 2 tablespoons of sugar to obtain a smooth cream.
Beat the egg whites until stiff with a pinch of salt, then add the sugar and continue to whisk.
Remove the pastry from the freezer and pour the ricotta, then add spoonfuls of jam, then pour the egg whites.
Bake in a preheated oven at 350°F for 20-25 minutes, lower the temperature to 340°F for the last 10 minutes.
Remove from the oven and let cool, then sprinkle with powdered sugar before slicing.
