Ingredients

  • 1 head smooth escarole
  • 2 oranges
  • 1.75 oz walnuts
  • 1.75 oz pomegranate seeds
  • 5 anchovies in oil
  • 2 fennel
  • 2 tablespoons extra virgin olive oil
  • pepper

Steps

  • Wash and dry the escarole, tear it into medium pieces by hand.

  • Peel the oranges, removing the pith, and cut them into slices or small segments.

  • Roughly chop the walnuts, wash and slice the fennel thinly.

  • Drain the anchovies and, if you prefer, cut them into pieces.

  • In a large plate, arrange the escarole, add the orange slices, fennel, walnuts, pomegranate seeds, and anchovies.

  • Dress with olive oil, a dash of vinegar (if you want a touch of acidity), pepper, and very little salt.

  • Let it rest for 5 minutes before serving, so the flavors meld.
