A real delight, the soft and tasty Sardinian sliced pizzas are perfect to enjoy at dinner or as a takeaway dish, a finger food loved by both adults and children, always great.

The recipe for Sardinian sliced pizzas is very simple, the dough can be made by hand or with a mixer, it’s hydrated with the addition of oil, then folded twice and left to rest.

They can be topped in many ways, soft and tasty, I remember when I used to visit my cousins who own a pizzeria in Sardinia, having a pizzetta was a must before taking a nice walk around the town center.

So many memories and how I miss those little things I did on vacation, I hope we can return soon.

Soft and Easy Sardinian Sliced Pizzas

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 1/4 cups 00 flour
  • 3/4 cup water
  • 2 tbsps extra virgin olive oil
  • 3 g fresh yeast
  • 6 g salt
  • 1/3 cup tomato sauce
  • 2 tsps extra virgin olive oil
  • 1 tbsp dried oregano
  • Some as needed mozzarella

Preparation

  • Dissolve the yeast in the water, then gradually add the flour and mix.

  • Add the salt and a tablespoon of oil, knead well, working the dough towards the center, turning it inside the bowl.

  • Spread it out with your hands on a lightly greased work surface and form a rectangle, brush with oil and fold once.

  • Position the rectangle with the long side facing you, bring one half of the dough towards the center and cover with the other half, then repeat with the short sides, overlapping them.

  • Form a ball and let it rest for 15 minutes.

  • Take the dough and repeat the fold, then let it rest in a container until it doubles in size, about 5-6 hours.

  • Once risen, take the dough, oil the baking sheet, place the dough, and let it rest for a couple of hours.

  • Mix the tomato sauce with a tablespoon of oil and oregano and season the pizza.

  • Bake in a preheated oven at 482°F for about 15 minutes, then remove, top with cheese, and return to the oven for another 5 minutes.

  • Remove from oven and slice into portions.
