Steps

Form a rectangle, bring the short side towards the center, cover with the other short side, make a ball and let rest until doubled, about 3 hours.
Repeat everything with the second dough adding cocoa, make a ball and let it rest until doubled.
Once risen, roll out the two doughs forming a kind of pizza, overlap the layers and cut into a cross shape, cut the diagonals until you get 8 triangles.
Roll starting from the base to the tip, curl the tips inward and let the croissants rest for 20-30 minutes.
Preheat the oven to 350°F, bake and cook for about 10-12 minutes.
Of course, you can fill them before or after, as you prefer.
