Soft chocolate cake without flour

Ingredients

  • 4 eggs
  • 4 tablespoons potato starch
  • 7 oz dark chocolate
  • 3/4 cup sugar
  • 7 oz butter (optional)

P.S. The butter is optional. I’ve made the dessert both ways, and it’s excellent. Those with lactose issues can skip it, and it turns out as shown in the photo, moist, melts in your mouth like the Tenerina cake. If there are dietary issues, I can confirm that it’s great even without butter; with butter, it’s even moister, almost wet in texture, and more calorific, so I’ll leave the decision to you. It’s delicious either way, I confirm.

  • Melt the chocolate in a double boiler and set aside.

  • Beat the egg whites with a pinch of salt.

  • Add the yolks to the chocolate, the sugar, and mix, add the butter and mix while it’s warm, but you can skip it if you prefer a lighter dessert or add only 2 ounces.

  • Add the potato starch, mix, add the egg whites and blend again with a spatula. If you’re not using butter, add some milk, about 1/4 cup.

  • Pour the mixture into an 8-inch pan lined with parchment paper or greased and floured.

  • Bake in a preheated oven at 350°F for 20-25 minutes. If using butter, it will be moister inside.

  • Remove from oven, let cool, and dust with powdered sugar or cocoa.
