SOFT LEMON TART, a snack dessert, tart filled with lemon cream and uncooked pulp, easy and quick.

If you love the scent and taste of lemons, this is a delicious soft lemon tart, easy to make with a quick cream with lemon pulp to prepare in a short time, perfect to enjoy after lunch or for breakfast.

The recipe for the soft lemon tart is taken from a cookbook. I used my classic soft shortcrust base, it’s very simple, consisting of a shortcrust pastry shell that encloses a quick cream.

SOFT LEMON TART

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 5 1/2 tablespoons butter
  • 1/3 cup sugar
  • 1 egg yolk
  • 3 tablespoons milk
  • 2 lemons
  • 1/4 cup all-purpose flour
  • 1 cup sugar
  • 1 1/2 tablespoons butter
  • 2 eggs
  • 1 pinch salt

Steps

  • Pour the flour into a bowl, add the baking powder, egg yolk, pieces of butter, and milk, knead well until you get a smooth shortcrust pastry.

  • Grate one lemon, set aside a teaspoon of zest.

  • Clean the lemons, remove the outer white part and all the membrane from the segments.

  • In a bowl, mix flour, sugar, a pinch of salt, lemon zest, butter, and eggs, then add the lemon pulp to obtain a cream.

  • Roll out half of the pastry in a 20 cm pan and fill it with the cream, then cover with the other half of the pastry.

  • Score triangles on the pastry, seal the edges well.

  • Brush with an egg yolk and bake at 392°F for 10 minutes, then lower to 356°F, cover with aluminum foil, and continue baking for about 30 more minutes, keep an eye on the oven.

  • Remove from oven and let cool, sprinkle with powdered sugar, serve with a bit of cream.
