A delight, soft oil cookies filled with nutella, for me they are actually filled with a lactose-free spread due to allergies but still very good.
Obviously for those who can, it’s better to prepare the soft oil cookies with nutella, I adore them, they are prepared in a few minutes and can be baked thanks also to the fact that the shortcrust pastry contains leavening agent.
The leavening agent gives a bit of softness to the cookie, a few grams that you can obviously omit.

Ingredients
- 2 cups All-purpose flour
- 1 Egg
- 1/4 cup Extra virgin olive oil
- 2/3 cup Sugar
- 2 tbsps Milk (if needed)
- 1 teaspoon Baking powder
- as needed Nutella
Preparation
Place the sifted flour with the baking powder on a work surface and make a well in the center.
Add the sugar, egg, and oil.
Knead quickly and if needed add a bit of milk.
Of course, you can prepare the dough by putting everything into your food processor.
Dust the surface with some flour and roll it out, cutting it with a 2-inch round cutter into an equal number of discs as they will need to be paired.
Fill one cookie with nutella and cover with another disc, seal the edges well using a fork or a fluted pastry wheel.
Place them on the baking tray lined with parchment paper and bake in a preheated oven at 350°F for about 15-20 minutes, they should just lightly color.
Remove from oven and dust with powdered sugar.
