Ingredients

  • 2 cups all-purpose flour
  • 1/3 cup extra virgin olive oil
  • 1 egg
  • 1/3 cup sugar
  • Half packet baking powder
  • 3.5 oz apricot jam
  • 4 amaretti cookies

Preparation

  • Divide the dough into two parts, one smaller for the topping strips.

  • Roll out the pastry in a 8-9 inch pan with a 1.2 inch edge, fill with jam.

  • Add the crumbled amaretti, then roll out the other pastry and cut the strips.

  • Place them on the filling to form a lattice, then bake in a preheated oven at 350°F for about 25 minutes.
