The recipe for soft potato flatbreads is really very simple, the potatoes make these focaccias soft. I made them rather small, like finger food, but you can make them much larger and they’ll be perfect for dinner.
Of course, they can be stuffed as you like or with what you have in the fridge, speck, mortadella, mozzarella, fiordilatte, or ricotta are perfect.

Ingredients
- 4.8 oz potatoes
- 1.6 cups all-purpose flour
- 1 1/2 packet instant yeast for savory preparations
- 1 1/2 tsp salt
- 3.4 oz water
- 3.5 oz crescenza cheese
- 5.3 oz cooked ham
- 1 tsp dried oregano (or rosemary)
Preparation
Peel the potatoes and cut them into chunks, then boil and drain them well.
Place them in a mixer, add the flour, yeast, oregano, and then salt, blend everything and add a little water if needed.
Take the dough, roll it out to a thickness of 1/8 inch and cut it with a 2-inch cookie cutter, or larger if you prefer.
Cook in an oiled pan, turning them over with a lid on.
Remove them from the pan then split them in half and fill with ham and crescenza.
