Ingredients

  • 2 1/3 cups all-purpose flour
  • 1 1/4 cups cake flour
  • 3/8 cup milk
  • 1/2 cup ricotta
  • 1 egg
  • 7 tbsp sugar
  • 3 1/2 tbsp butter
  • 1 tsp lemon zest
  • 2 tsp fresh yeast
  • 1/3 cup Nutella®

Preparation

  • Dissolve the yeast with the milk and place it in the mixer bowl.

  • Add the flour gradually with the machine running and using the K hook.

  • Combine the sugar, grated lemon zest, ricotta, and butter.

  • Work until the mixture is well blended, then form a ball and let it rise in a bowl covered with plastic wrap until it doubles, about 5 hours.

  • After rising, take the dough and roll it out on the work surface to form a round, then make a cross cut.

  • Score the diagonals to get 8 triangles, fill with Nutella, then roll from the base.

  • Place the croissants on the baking sheet lined with parchment paper and let rest for 20 minutes.

  • Heat the oven to 350°F, then bake the croissants for 15-20 minutes.
