Delicious soft ricotta flatbreads stuffed with speck, ideal to serve as an appetizer but are excellent for dinner as a main course, they are truly delightful.

The recipe for soft ricotta flatbreads with speck is very simple, the dough can be easily made either by hand or with a mixer as I did, then rolled and cut to be filled.

They are an excellent fridge-cleaner, perfect with cooked ham, salami, various vegetables like zucchini, peppers, or eggplants, or with different cheeses.

Ingredients

  • 1 1/4 cups all-purpose flour
  • 2 oz ricotta
  • 1/4 cup water
  • 3 1/2 oz fiordilatte
  • 3 1/2 oz speck

Preparation

  • Put the flour with the ricotta, salt, and water in a mixer and work everything, the dough should not be sticky.

  • Dust the surface with flour and cut the dough with a 4-inch mold.

  • Stuff with fiordilatte and speck half of the discs, then close them with the other half.

  • Seal the edges with a fork and cook in a pan turning them or bake for 15 minutes at 356°F.
