Ingredients

  • 12.3 oz re-milled durum wheat semolina flour
  • 5.3 oz type 0 flour
  • 0.35 oz fresh yeast
  • 0.21 oz salt
  • 1 cup + 1 tbsp water
  • 1 tbsp extra virgin olive oil
  • 0.35 oz sugar
  • 250 ricotta

Steps

  • Dissolve the yeast in a little water with the sugar and let it rest for 10 minutes, until it activates and starts bubbling.

  • Pour the flours into a bowl, add the water a little at a time and mix, add the oil and finally the salt, knead until you get a soft, non-sticky dough.

  • Cover with plastic wrap and let it rest for 30 minutes.

  • After the time has elapsed, take the dough and shape it into a rectangle on parchment paper, then cut out the triangles and dust them with semolina flour.

  • Place the rolls on the baking sheet and let them rest for another 30 minutes.

  • Preheat the air fryer to 392°F for 5 minutes, then place the rolls and cook at 356°F for 7 minutes, then turn them over and cook for another 4 minutes.

  • Alternatively, lightly oil a pan and heat it, cook the triangles with the lid closed turning them.

  • Of course, there is always the option of baking at 392°F for 15 minutes.
