I made these soft rolled cookies with red fruits to use up some cherry jam and red fruits I had in the fridge, and I must say they quickly became a must-make breakfast sweet.
They are simple, fragrant, and really quick to prepare, with a quick shortcrust pastry that remains soft even the next day.
These rolled cookies with cherry jam are perfect for everyday breakfast, but also for children’s snacks or to serve when you’re craving something sweet without turning on mixers or spending hours in the kitchen.

Ingredients
- 1.25 cups flour (The one you usually use)
- 0.25 cup sugar
- Half packet baking powder
- 1 egg
- 1.75 oz butter
- 1 pinch vanillin
- 4 tablespoons sugar
- 4 tablespoons berries
- 2 tablespoons water
Steps
Place the flour with baking powder and vanillin in a bowl, add a pinch of salt, butter, and the egg.
Mix quickly until smooth and set aside.
In a saucepan combine the 4 tablespoons of sugar, red fruits, and water, let it cook until it thickens, about 8-10 minutes.
Roll the dough on a floured surface and cut into a rectangle, fill with cherry jam and red fruits.
Roll and bake at 356°F for 15 minutes.
Remove from oven, let cool, and cut into 7-8 pieces, dust with powdered sugar.
