Ingredients

  • 2 1/2 cups all-purpose flour (the one you usually use (about 300 g))
  • 1 egg
  • 1/2 cup butter (about 120 g)
  • 2.8 oz granulated sugar (about 80 g)
  • lemon zest

  • 1 cup mascarpone (250 g)
  • 2 apples
  • 1/4 cup granulated sugar (about 50 g)
  • 1 egg

Steps

  • Mix flour and sugar. Add cold butter, cut into pieces, and work it with your fingers until you obtain a sandy texture.

  • Add the egg, the salt and the lemon zest. Knead quickly until you form a dough. Wrap it in plastic wrap and place in the fridge for 30 minutes.

  • In a bowl, mix the mascarpone, the egg and the sugar; add 1 tablespoon of flour or cornstarch and mix well.

  • Peel the apples, slice them thinly and dress with lemon juice and, if you prefer, a little cinnamon.

  • Divide the dough into two parts. Roll out the pastry and line an 8–9 in baking pan (20–22 cm), prick the bottom with a fork. Pour in the mascarpone cream and arrange the apples on top.

  • Close with a disc of pastry, seal the edges and bake in a conventional oven at 356°F for 35–40 minutes. Let cool before slicing.
