SPAGHETTI BELLA NAPOLI Neapolitan first course

Ingredients

  • 10 oz spaghetti
  • 1 eggplant
  • 1/2 yellow bell pepper
  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • 8 tomatoes
  • 4 salted anchovies
  • 1 tbsp salted capers
  • 1 clove garlic
  • 2 tbsps black olives
  • to taste caciocavallo cheese

Steps

  • Cut the eggplants and bell peppers into cubes, optionally add a zucchini cut into small cubes.

  • Sauté the garlic with anchovies if you prefer, add all the vegetables and tomatoes, the washed and dried capers, and finally the olives.

  • Let it cook and in the meantime, boil water for the spaghetti and drain them al dente, add a few ladles of cooking water to the sauce.

  • Add the spaghetti to the sauce, mix well and add the cheese.
