Ingredients
- 7 oz spaghetti
- 3 tbsp pine nuts (I use walnuts)
- 1/2 cup Parmigiano Reggiano PDO
- 7 tbsp extra virgin olive oil
- 1 bunch basil
- 1 bunch parsley
- 2 lemons
- 1 clove garlic

- Immersion blender Kenwood Triblade
Preparation
Wash the basil and parsley well and place them in a tall container or a mixer, add the garlic.
Pour in the oil and the cheese, start blending; I used a mini chopper.
Add the pine nuts or walnuts and the lemon juice; if you prefer, you can add a grating of lemon zest.
The pesto should not be too thick, so if it is, just add a little lemon juice to make it creamier.
Bring the water for the pasta to a boil, cook until al dente, then drain, reserving some of the cooking water.
Put the spaghetti back into the pot where you cooked them, add some of the reserved water and the pesto, mix carefully and plate.
